PLYMOUTH — A steady stream of customers kept Bourbon Street Pizza workers busy during the restaurant’s opening night Wednesday.
Owner Tim Harman said he had been planning a Plymouth location for the restaurant for about two years. Bourbon Street Pizza is also located in Bourbon and in Nappanee under the name Nappanee Pizza Company.
“The atmosphere (of all three restaurants) is going to be very similar, with the hometown decor and memorabilia,” said Harman.
The food is also the same.
“Our MO is pretty much pizza, pasta, and appetizers,” said Harman.
Although there are several other pizza options in town, Harman believes that local fans of his pie will support Bourbon Street.
“Plymouth could use another strong independent pizza place,” said Harman Wednesday.
Many diners stopped to chat with Harman and congratulate him on the opening.
“Plymouth is my hometown,” explained Harman. “It helps — people like to support friends. It’s about relationships.”
Bill and Esther Thompson, of Plymouth, were two of the many that enjoyed dinner at the new restaurant Wednesday.
“It’s just excellent, excellent food,” said Bill, adding that the couple had frequented the Bourbon location. “It will be nice to have (Bourbon Street Pizza) in town,” said Bill. “It helps that Tim is local too.”
More than 20 employees have been hired at the restaurant, and it seemed that most were on hand Wednesday. Harman said that in his experience, not much advertising is needed when opening a new location.
“We’ve just promoted it by word-of-mouth,” said Harman. “This opening is similar to what happened at the opening of Nappanee Pizza Company. We opened on a Friday, and did half of what we would normally do on Friday. We just turned the lights on. In my experience, all you need is a now open sign.”
Bourbon Street Pizza is open seven nights a week, from 3 to 10 p.m. and until midnight on Friday and Saturday. They will also open at 10:30 a.m. Friday and Saturday. Eventually, Harman said, his goal is to offer lunch seven days a week as well.
The restaurant is located on Oak Road north of Dairy Queen.
