Zesty Pasta Salad Recipes
10 ounces rotini pasta
11/2 cups broccoli, cut into florets
1 can (15 oz.) kidney beans, drained and rinsed
1 large red or green sweet pepper, chopped
1/3 cup chopped onion
4 ounces part skim Mozzarella cheese, cubed or grated
1 can (2 oz.) chopped ripe olives
1 large carrot, diced
8 ounces lean, cooked roast beef, cut in julienne strips
2/3 cup (or amount to taste) low-calorie Italian dressing
1. Cook pasta according to package directions.
2. Drain and rinse with cold water. Pour boiling water over broccoli, drain and immediately
rinse with cold water.
3. Combine additional ingredients and chill before serving.
