Coconut provides a variation to the usual carrot salad flavor.

3 large carrots, shredded
1 cup raisins
1 cup walnuts
1/4 cup finely chopped celery
2 tablespoons shredded coconut
1/2 cup mayonnaise
2 tablespoons sour cream
1 tablespoon cider vinegar
1/2 teaspoon white sugar
1/4 teaspoon salt
In a medium bowl, combine shredded carrots, raisins, walnuts, celery, and coconut.
Whisk together mayonnaise, sour cream, vinegar, sugar, and salt.
Plymouth track and cross country athletes Meagan Fisher and Mason Reed recently returned home from the Down Under Track and Field Meet in Sydney, Australia earlier this month.

Fisher, a 2013 PHS grad who will run for Bethel College beginning this fall, brought home two bronze medals in the 4x400 relay and the open 400, where she ran a 60.9. But her best finish was in the open 800, where her time of 2:16.6 won her the gold.
She also finished fourth in the womenâ€™s 18-19 high jump.

Mary Ellen Rudisel-Jordan

WARSAW â€”Â Mary Ellen Rudisel-Jordan, 61, of Warsaw passed away Thursday, July 18, 2013 as the result of injuries received in an automobile accident.
Mary Ellen was born July 23, 1951 in South Bend to Raymond and Mary Ann (Summy) Gradeless.
She was salutatorian in the 1969 graduating class of LaVille High School. She attended Manchester College and in 1974 she earned her degree from Ball State Universityâ€™s Architectural School.

PLYMOUTH â€”Â Marjorie E. Platz, 82, residing in Plymouth, passed away at 11:07 a.m. Friday, July 19, 2013 at the Pilgrim Manor, Plymouth. Marjorie was born Nov. 5, 1930 in Mishawaka to the late Russell and Sara (Pavey) Whittaker. She has been a lifelong resident. On June 29, 1948 in Lakeville, she married Loren K. Platz who preceded in death Nov. 11, 1981. One great-granddaughter, Madison Stacy; one sister, Violetmae Jackson; and three brothers, Delbert, Darrel and Robert Whittaker all preceded in death.

PLYMOUTH â€”Â Jane Ann Norris, 64, Plymouth, formerly of Rochester, passed away at 7:50 p.m. Friday, July 19, 2013 at St. Joseph Regional Medical Center, Plymouth.
She was born June 3, 1949 in Rochester to Charles and Huetta (Cloud) Norris.
Jane graduated from Rochester High School in 1967 and attended Trinity Bible Institute in North Dakota.
She worked at Hart, Schaffner and Marx for over 10 years, and also worked at Pilgrim Manor in Plymouth. She also enjoyed working in Health Care at the Cardinal Center in Plymouth.

PLYMOUTH â€” Merle J. Welch, 81, of Plymouth, passed away in Millerâ€™s Merry Manor, Plymouth, at 6:15 a.m. Friday, July 19, 2013.
Born Dec. 8, 1931, in Plymouth, he was the son of Cleo A. and Margaret E. (Hurford) Welch.
He graduated from Hamlet (Oregon-Davis) High School in 1950, and served in the United States Army until 1954 and the Reserves until 1960.
On June 17, 1956, in Plymouth, he took as his bride, Carol J. Suter.
Dorothy M. Singleton

KNOX â€”Â Dorothy M. (Steinberg) Singleton, 95, died Friday, July 19, 2013 in Golden Living Center, Knox.
Survivors include two sons, Ronald Singleton and Richard Singleton, both of Knox; one daughter, Sharon Singleton of Warsaw; seven grandchildren; 12 great-grandchildren; and eight great-great-grandchildren.
